I love pasta. But when I eat a big bowl of it I need a nap. I can’t have it for lunch and be able to go back to work. I needed a lighter version! These Plant-based Courgette Spaghetti with Chickpea Meatballs are perfect as a light lunch.
I used my beloved small mini chopper to chop grilled 1 1/2 red and 1/2 green bell pepper, 5 cloves of garlic, squeeze of tomato purée, Meridan agave syrup some water, onion salt and pepper.
I was a bit lazy today so I used Biona ready made ‘meatballs’:
Simple but tasty, homemade sauce is the best, shop bought pasta sauces might contain a high level of refined sugar and chemicals…
Also this way you can really make it to your own taste! 😉
